Pineapple Rum Boats
Ingredients
1 large pineapple
1 cup of dark Rum – preferably from the Caribbean
¼ cup of dark brown sugar
Assemble
Cut the pineapple lengthwise in half leaving the crown or leaves on. Take a knife and cut around the inside edge of the pineapple. Then cut crosswise then lengthwise in cubes. Remove from pineapple. Do this to both sides. Wrap the pineapple boats in foil and refrigerate.
Put the cube pineapple in a bowl, add rum and sugar. Mix well. Cover and refrigerate overnight. When ready to serve place. The chunks in the boats and put out for apps, snacks, or just to pick at. Set toothpicks next to it.
I like to add the pineapple with some of the juice to my Champagne. So good.
