Ingredients:

  • 6 cups Rice Krispies cereal
  • 1 (10 oz) bag marshmallows (or ~4 cups mini marshmallows)
  • 3 tbsp butter
  • 2 tbsp dark or spiced rum (or more for stronger flavor)
  •  ½ tsp vanilla 

Instructions:

  1. Melt butter in a large pot over low heat.
  2. Add marshmallows and stir constantly until fully melted and smooth.
  3. Remove from heat and stir in rum and vanilla. Tip: Let it cool for about 30 seconds before adding rum to avoid too much alcohol burn-off.
  4. Stir in Rice Krispies cereal until fully coated.
  5. Press the mixture into a greased 9x13-inch pan using a buttered spatula or wax paper.
  6. Let cool and set (about 30 minutes), then cut into squares.
  7. Optional: Drizzle with melted chocolate or mix a little rum with powdered sugar for a boozy glaze.
