12 ounces of Salt Fish Cod
1 tbsp olive oil
2 cloves of garlic minced
1 med onion diced
1 cup of sweet peppers diced
2 spring onions chopped
1 tsp fresh thyme
1 scotch bonnet
salt and pepper
Place saltfish in a medium bowl and cover with boiling water. Soak overnight. Drain and rinse well. Shred saltfish by hand. In a large skillet add oil and garlic. Sauté 30seconds. Add onion, peppers, thyme, and whole scotch bonnet. Reduce heat to low. Add the saltfish and simmer for 5 mins. Season with salt and pepper to taste.
Serve with a saffron rice and a bottle of a crisp white wine such as a Sauvignon Blanc or a Pinot Grigio. If you want to kick it up a notch an Albariño can be a good option.
