Summer Black Bean Salsa

Ingredients

1 can black beans drained and rinsed

1 avocado diced

1 cup cherry tomato’s

½ cup chopped celery

1 cup fire roasted corn

1 small red onion diced

1 TBLS chopped cilantro

3 TBLS fresh squeezed lime juice

2 TBLSP garlic olive oil

½ Tsp ground cumin

Salt/pepper to taste

1/8 Tsp cayenne pepper

In a medium bowl combine all ingredients and mix well.  Chill overnight.  Served with Tortilla chips. 

Of course Cerveza and Margarita’s go great with this but for us wino’s the perfect pairing would be: A Dry Reisling or a Sauv Blanc
